I wanted to make an eatable centerpiece to celebrate 4th of July,
without using the oven and wanted it to be something fresh.

so I changed and made a flower decorations with candles

Pannacotta with
Prune jam and
Borage flowers (borago ufficinalis)
Borage flowers (borago ufficinalis)
you need:
500ml of cream*
250ml milk
50gr of sugar**
lemon zest
20gr of gelatin or 4 tsp of agar agar
pre soak the gelatin in cold water
mix cream, milk, sugar and lemon zest
and put to boil.
add the agar agar and let cook gently
for 10min mix now and then
or
let cook for 10min and then add
the squeezed gelatin.
using a immersion mixer
mix well to dissolve completely
the gelatin.
pour the panna cotta in glasses or small cups
let cool and the put in the fridge for 8h
or all the night.
serve with prune jam and borage flowers***
* I used vegetable cream and no sugar
**originally the recipe says 150gr of sugar
absolutely to much for me :)

the borage flowers has a light bitter taste
and are crunchy
perfect together with the sweet panna cotta
and the prune jam.
